Have You Tried The Mooki Special?

It’s A Malaysian Swordfish Pilau (similar to a breyani, but much wetter).

Basically we make a sweet and spicy Curry stock by reducing down a blend of Masala mix, Onions, Currry leaves, Mint, Corriander, Garlic, Ginger, Fennel, Palm Sugar,Lime Juice, Various Spices, Home Made Fish Stock, Tomatoes, Coconut milk and Red Chillies. We reduce the sauce by 4 until it is thick, spicy and sweet, pass it through a fine seive and then set it aside.

To make the Pilau, we fry off some Garlic, Ginger, Onions, Spring onions, Patti Pans, Red Peppers, Leeks and Swordfish cubes. We add the Curry stock to this, stir fry for 30 seconds, add a dash of Cream and a bit of seasoning, then add the Thai Rice and stir fry for 2 minutes until all the Rice is coated.

We serve this with Corriander, Fennel leaves and a wedge of lime.
